Foodie Inspiration of the Day

BUTTER CHICKEN….mmm I can almost taste it in my mouth. It’s rich and warm, creamy and looks so delicious. Especially on one of these cool evenings we have had. Imagine it delightfully placed over a welcoming serving of basmati rice while cuddled up on the sofa, blanket and cat (or dog, or person) snuggled in close. Perhaps a Naan bread on the side?

Slow-Cooker-Butter-Chicken

These days my day consists of full-time work and then home to spend some quality time with nunubug Hannah before she is off to bed. Once she is down for the evening, I feel exhausted and dread having to cook, when I actually really love cooking. Sometimes you just need a little break and that is why I love this recipe.

If you have a slow cooker (I recommend you invest in one!) all you do is place all the ingredients in the slow cooker in the morning and by the time you get home the cooking is done for you. (Yay!)

For those who are busy and honestly can’t find the time or energy to cook in the evenings or you a busy mom with lots on the go that day, just use your faithful slow cooker.   Even if you aren’t much of a cook, this is a pretty straight forward recipe because all you do is bung the ingredients together and leave it to cook! Easy!

I found this recipe on Urban MommiesIt’s so easy and looks so delicious I’m going to make it this week.

INGREDIENTS and COOKING METHOD:

2 lbs boneless skinless chicken breasts and thighs
1 onion, sliced
6 garlic cloves, chopped
4 tablespoons butter
15 cardamom pods (put them in cheesecloth and tie with a string so they won’t escape)
2 teaspoons curry
½ teaspoon cayenne pepper
2 teaspoons garam masala
½ teaspoon ground ginger
1  can coconut milk
1  can tomato paste
2 tablespoons lemon juice
1 cup plain yogurt
(optional – green peas, broccoli, chick peas)

1.  Put chicken in a large slow cooker, and add onion, garlic, and all of the dry spices. Throw in the butter and tomato paste. Add lemon juice and coconut milk. Cover and cook on low for 8 hours, or high for 4. The chicken should shred easily with 2 forks when fully cooked.

2.  I like to add some easy veggies into the mix so 30 minutes before serving I add mini peas and broccoli to up the nutrition factor.  You could even add dried chickpeas at the beginning.

3.  Stir in plain yogurt 15 minutes before serving. Discard cardamom pods. Salt to taste, serve slow cooker butter chicken with white or brown basmati rice.
